7Bone Burger Co. brings its cult following for “dirty” American burgers into the middle of Bournemouth, tucking a loud, characterful burger joint into 9 Gervis Place. It belongs to an independent group that began life in 2013 as a Southampton street-food stall run by founder Matt Mollicone, and grew — one carefully built burger at a time — into a small chain of restaurants across the south. The food
Burgers are the whole point here. 7Bone is known for well-hung, dry-aged beef — it was among the first UK burger operators approved to serve its patties pink — sourced from the same local butcher the company has used since its market-stall days.
